The world has seen some fantastic meatless lasagna dishes, like this one at my favourite restaurant, but one of the best I’ve made is the lasagna that was featured on the show The Bachelorette.
I had the idea of making lasagna the old-fashioned way with fresh veggies and meatballs and I couldn’t be happier with the results.
The flavors are so satisfying and so versatile.
This recipe makes enough for one lasagna and two meatballs.
You can also use leftover meatballs for a more hearty version.
To make this meatless meatballs, start by slicing up a large beef, chicken, or pork rib eye and then slice a medium-sized red onion, green bell pepper, or yellow bell pepper.
Heat a large pot over medium heat.
Add the beef, onions, and peppers.
Cook for 10 minutes, then add the pork and continue cooking for about another minute, until the beef is tender.
Season with salt and pepper.
Add in the vegetables and simmer for about 30 minutes.
Remove the vegetables from the broth and then stir in the lasagne ingredients.
Top with the remaining meatballs (or you can use leftover shredded pork), tomato sauce, and basil.
